Its authentic!

I have now mastered an extremely easy curry recipe that can be made using and meat or fish.  My husband remarked that it was very authentic and let’s face it he’s the expert….plus I don’t really eat meat!



A fresh piece of peeled ginger
4 garlic cloves
2 green chilies
2 onions

1tsp turmeric powder
1tbsp cumin powder
1tbsp ground coriander
1tsp chilli powder

A generous amount of fresh coriander

Generous amount of tomato puree
4 tomatoes
Tin of chic peas

Meat/fish of your choice

The list of ingredients might seem extensive however the method is very simple and produces a beautiful authentic curry. 

Step 1
Food process into a paste the ginger, garlic and onions. 


Step 2
In a large pan heat a little oil.  Add the paste, green chilli’s deseeded a little salt and com for a couple of minutes.  


Step 3
Into the pan add the spice. 


Step 4
Add meat/fish at this point and brown. 


Step 5
Add the tomato purée followed by food processing the tomatoes and add to the pan. 

Step 6
Add a cup of water to the pan cover and simmer for 45 minutes. 


Step 7
Add the chic peas, spinach, and fresh coriander chopped to the pan and cook for a further 30 minutes uncovered. 


A simple curry which is versatile for whatever meat, fish or even vegetable you choice to use.
