Christmas Almond Cookies

Christmas is the perfect time to start baking even if your not at all a baker.  I enjoy spending time in my kitchen making baked goods for people especially during the festive season. 

A foul proof recipe that I have used for the past couple of years is from a book by Martha Stewart, Martha Stewart’s Christmas.  The recipe is very easy and has very few ingredients and no eggs required.  Martha calls them Almond Crescents however I don’t make my cookies into crescent shapes inside a traditional circular cookie.

Ingredients:
1 cup butter
2/3 sugar plus extra for rolling
1 teaspoon vanilla extract
1/2 teaspoon almond extract
1 cup chopped almonds
2 ⅓ cups flour

Method:
Cream butter and sugar.
Add vanilla and almond extract.
Add the chopped almonds.

Stir in the flour.
Roll almond dough and cut. 
Put onto a baking sheet. 
Cook until lightly golden around 10 minutes at 190°c.

I split my almond cookies between four IKEA glass jars adding a ribbon, label on the top of the jar reading Christmas Almond Cookies and a gift label.

I think they look extremely festive and a perfect way to say Merry Christmas!
