When I used to regularly visit Selfridge’s whilst a student I would often buy from the food court their delicious feta and spinach pastry of some description.
Today I decided to try and emulate that tasty Selfridge’s feta and spinach treat. I’m also unsure of its nationality however its very easy to make and delicious to eat.
Feta and Spinach Treat
1 packet of filo pastry
feta cheese 3/4 of a packet
6 cups of fresh spinach chopped
1/3 cup melted margarine
Step 1. Chop fresh spinach (6cups) place into a glass mixing bowl and microwave for about 2-3 minutes.
Step 2. Crumble into the mixing bowl the feta cheese.
Step 3. Unfold the fill pastry and melt margarine in a small glass dish.
Step 4. I used my Pampered Chef spring form tin to assemble my dish.
Place a sheet of the filo pastry into the tin and brush with a little melted margarine.
Step 5. Add another filo pastry sheet and brush with butter this time add a little of the mixture repeat this until filo pastry and mixture is finished.
Finish by brushing the top layer of filo pastry with melted margarine.
Step 6. Place into a oven for around 30 minutes 180°c.
I served the feta and spinach treat with a salad, my husband enjoyed it so much he had seconds!
Not the exact same as Selfridge’s however very enjoyable.
