Mini Simnel Cakes

Celebrating any season/holiday properly in my opinion must involve baking. 

I enjoy very much giving baked goods as small gifts to family, friends and even neighbours, nothing says more than I was thinking about you than sharing what you have baked. 

With that being said I would like very much to share with you a British Easter classic, simnel cake. 

Ingredients
1 cup dried fruit mix
1/2 cup butter
1/2 cup sugar
1 cup flour
2 eggs
1/3 cup glazed cherries
1 tablespoon mixed spices
Marzipan
Apricot jam

Method

Step 1.  Soak dried fruit in boiling water.

Step 2. Cream butter and sugar

Step 3. Add egg and flour and mix

Step 4. Add the fruit (drained), chopped glazed cherries and mixed spice.

Step 5. Grease the tin/individual baking try.  (I decided to make mini simnel cakes and used the pampered chef corner piece tray. 

Step 6. Spoon a little of the cake mixture into each well and then lay a thin piece of marzipan on top then add more mixed on top.

Step 7.  Bake for asking 30-35 minutes on about 170°. 

Step 8. When golden brown remove from the oven.  Allow to cool before adding apricot jam to the top of each cake and then another thin layer of marzipan.

Step 9.  Grill the cakes until the marzipan turns golden brown. 

I then put my mini simnel cakes in boxes and delivered to neighbours and friends.
