The weather has been beautiful unusual for Briton as it’s normally cold and wet. It is especially lovely to have such joyous weather as we lead up the the Easter celebrations.
Beautiful weather automatically gives me the desire for a bowl of salad and enjoy it alfresco.
So before I began making my mini simnel cakes which really are an Easter classic (the easy recipe I will share tomorrow) I made a beautiful salad.
I find that using salad leaves that are mixed and prewashed is the perfect way to begin creating the delicious salad.
Today it was just lunch for one so I added:
A little of the mixed leaf salad leaves
Sun dried tomatoes plus a little of the oil as a dressing
My salad was not only colourful and perfect for alfresco dinning but healthy and very delicious.
