King Prawn Thai Soup

Fish is a Friday tradition in many households and in keeping with this British tradition I decided to make a none traditional fish dish of King Prawn Thai Soup. 

Ingredients:
2 onions
1/2 pepper
2 sticks of celery
1 large carrot
5 mushrooms
A little fresh ginger
1 tbsp green Thai curry paste
Lemon juice
6 cups of vegetable stock
Prawns
Noodles

Step 1.  Add the onion chopped finely and grate thinly fresh ginger and Thai curry paste and add to a hot pan with a little oil.

Step 2. Slice the vegetables.

Step 3. Add the vegetable stock to the pan.
Step 4. Add the sliced vegetables and lemon juice.
Step 5. Add the noodles and king prawns and cook gently.

I don’t like to over cook the vegetables so a little crunch is better. 

The soup tasted delicious another great kitchen success!
