Lamb and Spinach Curry is my husband’s favourite so I decided that I would share my delicious recipe on my blog that you too can impress your loved ones with a fabulous meal!
Lamb cut into small pieces (include bones when cooking to add to the taste)
Garlic 2 teaspoons
Ginger 1 teaspoons
Chilli powder 1/2 teaspoon
Ground Coriander 2 tablespoons
Pepper 1 teaspoon
Turmeric 1 teaspoon
Salt 1/8 teaspoon
Greek Yoghurt 6 tablespoons
Lemon 1 teaspoon
Fresh Baby Spinach 400g
Step 1: add garlic, ginger, chilli powder and ground coriander into a small bowl.
Step 2: cut up the lamb and all the spices in step 1 and refrigerate.
Step 3: cut onions, I used my pampered chef food chopper. Add the onions to a hot pan with a little oil.
Step 4: when the onions are cooked add the lamb into the pan, turn down the heat to medium.
Step 5: add pepper, turmeric and salt. Stir a few times over a 10 minute period.
Step 6: add lemon and yoghurt and stir.
Step 7: cut spinach into strips and stir and cook on a low heat until meat cooked and tender.
I served my lamb and spinach curry with naan bread and brown rice my husbands wasn’t disappointed!
A completely easy recipe that makes a delicious curry every time.
Many recipes for curry involve tomatoes, this however is a nice alternative.
